I always thought those endings were more-or-less supposed to represent that the protagonists of the fairytale had reached a situation where they were happy with the situation they were in- like most peasants in the feudal era didn’t actually have ambitions to rise to the aristocracy, so generally lacking the opportunity didn’t make them unhappy.
